Pancakes
Filling
Description
Whisk together the eggs, milk, flour and salt to make the pancake batter. Melt a little butter in a pan and fry the pancakes one at a time. Mix the natural yoghurt with the chives, salt, pepper and lemon zest. Spread yoghurt over half a pancake, top it with smoked salmon, slices of avocado and sheep’s milk cheese and fold the pancake over.
