First, cut the cucumber into thin slices, mix with apple cider vinegar, sugar, and salt, and let it sit for 10 minutes.
For the sauce, blend the yogurt, herbs, garlic, lemon juice and olive oil in a blender or with an immersion blender until smooth. Then season to taste with salt and pepper.
Cook the grilling cheese in a hot skillet or on the grill until golden brown and crispy on both sides. Cut the spring onions in half lengthwise, then place them cut-side down on the grill or in a grill pan and roast for 3 to 4 minutes. Cut the burger buns in half and toast them lightly.
Spread the sauce over the bottom halves of the buns and top with lettuce leaves. Add a few cucumber slices and two spring onion halves to each bun, then top with the grilling cheese and generously sprinkle with Lay’s Sour Cream & Onion potato chips. Finally, close the burgers with the top bun halves – and enjoy!
